Baigan Pakori Recipe or Brinjal Pakori Recipe

Baigan or Brinjal is usually not much loved by children but you can try cooking and serve Brinjal/Baigan pakora. My grandmother use to prepare Brinjal Pakoras with Potato and Onion Pakoras as a complimentary snack.

  • Preparation time – 10 mins
  • Cooking time –  5 mins
  • Serve persons – 4

Ingredients

S. No. Ingredients Quantity
1 Baigan or Brinjal 1 Small size Piece
2 Besan (Gram flour) 1 Cup
3 Chopped Green Chilli 2-3 pieces
4 Cornflour/Rice Floor 1 Tablespoon
5 Chopped  Green Coriander leaves  1/2 Tablespoon
6 Salt As per taste
7 Refined oil for deep fry 500 ml
8 Red Chilli powder 1 Tablespoon
9 Water 1/2 Cup
10 Ajwain/Carom Seeds  1/4 Tablespoon

Recipe method

Step 1 – Take a bowl cut Baigan/Brinjal slices using knife or food processor (do not cut much thick).

Step 2 – Take besan/Gram Flour, Rice or Cornflour flour, Red chili powder, Ajwain, Salt in a bowl. 

Step 3 – Add the water and mix it properly to prepare a smooth paste.

Note –  To batter preparation add the water slowly, initially, make the paste then apply  more water until it converts into the batter.

Step 4 – Apply corn flour or rice coating to cover potato slices. I have mixed brinjal slices in the batter.

Ready to fry

Step 1 – Heat the oil (500 ml) in a kadhai to deep fry.

Step 2 –  Drop and fry the Coated Pakoras carefully in the kadhai till turns glossy, take out from kadhai keep aside.

Baigan/Brinjal Pakori is ready, Serve it hot with tomato ketchup and green mint chutney.
