Besan Khaman Dhokla

Dhokla is a famous Gujarati snack. This is a popular street food in Gujarat. Khaman Dhokla is a steamed cake made from gram flour.

Ingredients Details

S. No. Ingredients Quantity
1 Bean/Gram flour 250 gram
2 ENO 1 packet
3 Yogurt/dahi 4 tablespoon
4 Green chilli 5-6 pieces
5 Curry leaf 4-5 pieces
6 Mustard/Rai seeds 1 tablespoon
7 Salt As per taste
8 water 125 ml
9 Refind Oil 2 tablespoon
10 Green coriander leaf  2-3 leaves

Step 1 – Take a bowl and add Besan + 4 tablespoon yogurt + ENO+ salt and 125 ml water and mix it properly to prepare dhokla batter.  ENO is used to make Dhokla soft and spongy.

Step 2 – Take a Dish and grease the internal surface with oil and pour the dhokla batter into a dish. If greased well, the Khaman/Dhokla will easily get inverted on the plate after preparation.

Step 3 – Take the Pressure cooker and add ½ glass water, The Idea is to steam the dhokla batter in the dish.

Step 4 – Place the dish inside to cooker, The water should already be boiling or hot when you place the dish with the dhokla batter and steam for 15 to 20 minutes.

How to check Dhokla is ready or not?

Step 1 – Take a knife and insert into dhokla to check if it comes out clean without batter sticking on the knife surface, the dhokla is done.

Step 2 – Cool for few minutes.

Step 3 – Cut the dhoklas into squares using a knife.

Tempering

Step 1 – Take a frying pan and add 1 tablespoon oil + 1 tablespoon Mustard seeds when they began crackles then add Green chilli + curry leaves and saute for few second.

Step 2 –  Tempering is ready and pours it over Dhoklas.

Step 3 – Cut the dhoklas into squares using a knife.

 Dhokla is ready to Garnish it with Green coriander leaves and serves it with Green chutney/ketchup.
