Mexican style and famous veg recipe prepared using spicy beans, half roasted veggies, fresh tomato and corn salsa are all needed for a hearty lunch or dinner bowl.

Ingredients
  • 1 tbsp olive oil
  • 4 tbsp Butter/Ghee
  • 50 gram black beans or rajma boiled
  • 50 gram rice boiled
  • 50 gram cabbage chopped
  • 25 gram red capsicum chopped
  • 25 gram green capsicum chopped
  • 1 piece onion chopped
  • 25 gram Red cabbage chopped
  • 2 tbsp green coriander chopped
  • 2 pieces green olive

  • 4 tbsp sour cream
  • 1/2 tbsp red chilli flakes
  • 1/2 tbsp black pepper
  • 2 tbsp vinager
  • 1 tbsp salt

Instructions
  1. Assemble all the ingredients

  2. Heat butter in the pan.

  3. Add the chopped vegetables in pan: green cabbage + red capsicum + green capsicum + onion + Red cabbage. half fry all the veggies and keep aside.

  4. Again heat the pan with 2 tbsp butter and add rajma/red beans + onion and saute for 2 minutes.

  5. Take a bowl add half fry veggies + rajma + boiled rice + vinegar + black paper + red chilli flakes + corn salsa + tomato salsa + chopped green coriander and sour cream.

  6. Vegetarian Burrito bowl is ready to eat.
