Chokha Recipe

Chokha is a famous dish of Bihar and Jharkhand prepared using roasted brinjal pulp. It is served with Litti or Bati. Chokha is very delicious and spicy in taste.

Ingredients
  • 2 tbsp olive oil
  • 500 gram Brinjal or eggplant Roaste
  • 1/2 tbsp garlic paste
  • 1 piece green chilli chopped
  • 1 piece onion Chopped
  • 1 tbsp Imli or Tamarind water
  • 1 tbsp red chilli powder
  • 1 piece tomato choppped
  • 1 tbsp green coriander leaves
  • 1/2 tbsp Cumin seeds (jeera)
  • 1 pinch Hinge or Asafoetida

Instructions
  1. Soak Imli or Tamarind for 10 minutes.

  2. Grease the Brinjal with oil and make the deep hole in Brinjal carefully using the knife so that the Brinjal roast quickly. Roast it on the high flame. check and keep it moving from all sides to roast properly

  3. As soon roasted keep it aside to cool it down in the room temperature When Brinjal cools down to peel the skin completely and mashed it properly.

  4. Heat oil in a kadhai adds Cumin seeds or Jeera + Hinge or Asafoetida and saute for 30 sec.

  5. Add chopped green chilli + Onion and saute until they turn transparent.

  6. Now add mashed Brinjal + Garlic paste + Imli or Tamarind water + red chilli powder + Salt, mix it well and saute for 1-2 minutes.

  7. Chokha is ready, Garnish it with chopped tomato + ring onion and coriander leaves.

Chokha is ready, Serve it with Hot With Bati or Litti..
