Punjabi Kadi Recipe

This is the popular sour yogurt kadi prepare with besan + onion pakora and some spices. I have to temper for this kadi of clarified butter/ghee and dry red chili is must get the best flavor of kadi. The main point you have to remember is to use sour Dahi for this kadi. Sour Dahi make this so tasty and provides that sour taste.

Ingredients
For Kadi
  • 1 tbsp olive or refined oil
  • 500 gram Sour curd/yogurt/dahi
  • 50 gram besan or gram flour
  • 1/2 tbsp Methi or Fenugreek leaves
  • 1 tbsp turmeric powder
  • 6 pieces kadi patta
  • 1 piece onion chopped
  • 4 pieces Dry red chilli
For Pakora
  • 250 ml olive or refined oil
  • 1 piece oinon chopped
  • 10 pieces coriander seeds
  • 125 gram besan or gram flour
  • 1/2 tbsp coriander powder
  • 2 pieces green chilli chopped
  • 1 tbsp salt
  • 1 pinch baking powder
For (Tempering) Tadka
  • 2 tbsp Ghee/Clarified Butter or Unsalted Butter
  • 1 pinch Hinge or Asafoetida
  • 4-5 pieces Dry red chilli

Instructions
  1. Assemble all the ingredients.

  2. Take a bowl add besan + chopped onion + chopped green chilli + garam masala + salt + baking powder + water and mix it well.

  3. Make a thick paste (like Idly batter)

  4. Heat oil in a kadi. Take a spoonful batter and drop in a kadi. Drop 6-7 pakoras in one time.

  5. Deep fry them until medium brown and crispy.

  6. Kadi pakora is ready.

  7. Beat curd + besan with a hand beater or blender.

  8. Heat 2 tablespoon oil in a kadhai add methi seeds + dry red chilli + curry leaves and stir 20-30 seconds.

  9. Add chopped onion and saute till onion turns golden brown.

  10. Now add curd-besan mixture + turmeric powder + salt + red chilli powder

  11. Kadi should be cooked 20-25 minutes in a medium flame.

  12. Once kadi boiled well, add pakora and stir simmer 2-3 minutes.

  13. heat 2 tablespoon ghee in tempering spoon, add Hing + 4-5 pieces dry red chilli and pour it in a kadi. Punjabi kadi is ready.
